CURRENT PROJECT

Fruit residues: low cost substrates for development of new food products.

The main goal of this project will be to optimize bioconversion fermentation process for fruit residues developed at laboratory scale using apple pomace as a model and at the same time adapting the developed technology to the needs (and opportunities) of New Zealand primary industries. As case of study the research is particularly focused on the phenomenon of nitrogen gaseous
